The anaerobic breakdown by micro-organisms of complex organic substances, especially carbohydrates like glucose. The process is energy-yielding. Fermentation is often misused to describe large-scale aerobic cell culture in specialized vessels (fermenters, bioreactors) for secondary product synthesis.
